Chocolate Caramel Sensation
I recently made a discovery that I have to share! Those of you that follow my blog or have my cookbooks know that I am a big fan of all things chocolate. A couple of weeks ago I went on a tour of the Hummingbird Chocolate Factory in Almonte and it was heavenly. One of the really great parts was getting a chance to taste fresh cacao nibs. My experience with them in the past was that they were rather bland and bitter. When they are fresh it is an entirely different story. They are full of flavour and not bitter at all.
One morning a few days after the tour I was getting ready for a workout and needed an energy boost. I reached for the cacao nibs and a date and ate them together. WOW! It was a chocolate caramel explosion in my mouth. It is a great snack because cacao nibs are antioxidant and iron superstars and dates are a sweet and wonderful whole food that I cannot say enough good about. Together they are magic.

Step 1: Put a soft, pitted date in your mouth and begin to chew
Step 2: While the date is still in your mouth pop about a teaspoon of cacao nibs into your mouth with the date
