Red Lentil Soup

This fast, delcious and protein rich soup makes a perfect meal when paired with some fresh bread and a salad. Simple is all you need sometimes.

Ingredients:
4 cups water or vegetable broth
1 (796ml 28oz) can whole or chopped tomatoes
2 potatoes cubed
3 carrots, chopped
1 onion, chopped
2 cloves garlic, chopped (divided)
1 1/2 cups red lentils
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon sea salt
Pepper to taste
Handful of fresh cilantro, minced

Directions:
Add all ingredients to a large pot, cover with a lid and bring to a boil. Reduce to a simmer and cook for 30 minutes. Add minced cilantro and serve.
