Nine year old Levi and I spent some time in the kitchen on my first trip to Hawaii creating a new energy bite recipe. Levi made all the choices and the end result is a perfectly sweet and energizing chocolate treat. Levi and his brothers needs lots of energy when they are out body boarding and surfing and these energy bites are the perfect clean and powerful fuel for a day in the ocean. Levi lives on the island of Oahu (pronounced Aw-Wa-Who) and he picked the name for this new creation.

Oahu Energy Bites by Levi & Deb

Step One:

1 cup dates, pitted and soaked

1/2 cup raw almonds, whole or sliced

1/4 cup peanut butter

2 tablespoons chia seeds

1 tablespoon cocoa powder

1/2 tsp vanilla extract

Remove pits from the dates and soak in hot water (dates should be just covered) for 10 minutes to soften the dates. Drain the water from the dates and add the dates, almonds, peanut butter, chia seeds, cocoa powder and vanilla extract to a blender. Blend until the dates are more like a date paste and the nuts are still a bit chunky. You may have to stop the blender a few times to stir and then start again.

Step Two:

Place blended ingredients in a large bowl and add the following:

1/2 cup shredded coconut

1/4 cup mini dairy free chocolate chips

1/4 cup oat flakes

Step Three:

Mix all ingredients together in the bowl with your hands until it becomes very sticky. Form small balls – the size of a large marble and store in the fridge or freezer. The balls will not freeze, just become firmer in the freezer.

Optional: Roll the balls in some extra shredded coconut before placing in the fridge

Makes 12-15 energy bites

    Thanks for this delightful recipe. I would like to try it with my grandchildren. And thanks, too, for your comments about climate change. Another study showed that the raising of livestock actually contributes over 50% of climate change.
