Nutty Caramel Apples

Halloween is just around the corner and I have been seeing caramel apples everywhere. They bring out the little kid in me. The only problem is the kind I see in store are made with butter and a whole lot of refined sugar. You probably know by know that I love to replace sugar with dates in recipes and it’s more than easy to make dates taste like caramel with some vanilla extract. I decided to go for it and create a healthy vegan version of this seasonal treat and the results are fantastic!

Ingredients:
3 apples
1/3 cup dates, pitted
2 Tablespoons maple syrup
2 Tablespoons melted coconut oil
1 1/2 teaspoons vanilla extract
pinch of sea salt
1/3 cup chopped nuts

Directions:
Place dates, maple syrup, melted coconut oil, vanilla and salt in a blender and blend until smooth. (If your blender is less powerful soak the dates for 1 hour in hot water and then drain). Insert a popsicle stick about halfway into each apple and then spoon on the caramel coating. Sprinkle with chopped nuts and place in the fridge. Allow to chill for 30 minutes and then serve.
