End of Summer Pasta

It’s nearing the end of the gardening season and the summer vegetables like tomatoes and zucchini are providing the last of their goods. Basil and other herbs are also on their last legs and it’s time to put them all to good use. The nice part is that even if the tomatoes are not quite ripe and the basil looks a little cold weather damaged they still taste great in this recipe. This simple and very tasty sauce goes wonderfully on brown rice pasta. I cooked the sauce with some red lentils to increase the protein and the end result is a beautiful meal that will leave you very satisfied. Head into your garden or to your farmer’s market this weekend and make this fresh meal while you can.

End of Summer Pasta Ingredients:

3 large tomatoes, diced
1 zucchini, sliced
1 cup water
1/2 large onion, chopped
1/2 cup dry red lenitls
1-2 cloves garlic, minced
1/2 tsp sea salt
Handful of fresh basil leaves, chopped

Directions:
Cook brown rice pasta according to the package directions and as it’s cooking prepare the sauce. Add all of the ingredients to a medium sized pot and bring to a boil. Reduce to a simmer and allow to cook for 25 minutes or until the red lentils are no longer visible. Serve over brown rice pasta.
