Classic Black Bean Soup

This is a silky smooth soup with a protein punch. A small bowl is all you need to keep you satisfied for hours.

4 cups water

3 (398ml) cans black beans or 5 cups cooked black beans

3 garlic cloves, minced

1 onion, finely chopped

1 red pepper, finely chopped

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon sea salt

1/2 teaspoon oregano

Pepper to taste

Toppings:

Handful of fresh cilantro, chopped

1 avocado, cut into small cubes

Add all ingredients to a large soup pot and bring to a boil. Reduce to a simmer and allow to cook for 30 minutes. Remove from heat and use an immersion blender to blend the soup partially. Alternatively, blend half of the soup in a regular blender and then return it to the pot and stir back into remaining soup.

Serve into bowls and top with chopped cilantro and avocado cubes.
