BBQ Pulled Sweet Potato Sandwich

Perhaps the most delicious recipe I have ever developed! The sauce is incredible and the sweet potato is just the right texture for this incredible sandwich.

4 cups shredded sweet potato (about 3-4 medium sweet potatoes)

2 teaspoons coconut oil

1/2 teaspoon sea salt

Pepper to taste

2 cups Tangy BBQ sauce (see recipe below)

4 whole grain buns

1 cup coleslaw

Shred the sweet potato using a grater. Heat the oil in a large, deep skillet over medium-high heat. When hot, add the shredded sweet potato, sprinkling with salt and pepper. Cook for about 10 minutes, stirring and flipping the sweet potato several times, until lightly browned.

Once the sweet potato is starting to brown, reduce heat to medium-low and stir in the BBQ sauce. Cook for an additional 10-15 minutes, or until the sweet potato is soft.

Serve the BBQ pulled sweet potato on a toasted bun with topped with coleslaw.

Serves 4

Tangy BBQ Sauce

1 5.5-ounce (156ml) can tomato paste

1/2 cup water

1/4 cup maple syrup or sugar

2 1/2 tablespoons soy sauce

2 tablespoons apple cider vinegar

1 tablespoon molasses

2 cloves garlic, minced

1/2 tablespoon smoked paprika

1/2 tablespoon chili powder

1 teaspoon onion powder

1 teaspoon freshly ground pepper

Combine all ingredients in a bowl and whisk until well combined.

Makes about 2 cups
